A fibre-rich, prebiotic, and probiotic-packed bowl to nourish your gut and promote radiant skin. (serves 2)
For the Base
- 1 cup cooked quinoa (provides protein)
- 1 cup mixed leafy greens - spinach, rocket, or kale
- 1/2 cup steamed broccoli
- 1/2 cup roasted sweet potato, cubed
- 1/4 cup grated carrots
- 1/2 an avocado
Gut-Boosting Toppings
- 2 tbsp fermented sauerkraut
- 2 tbsp plain unsweetened Greek yogurt or coconut yogurt
- 1 tbsp ground flaxseeds
- 1 tbsp pumpkin seeds
Dressing
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp raw honey
- Juice of 1/2 a lemon
- Pinch of sea salt and black pepper to taste

Prep the Base: Layer the cooked quinoa and leafy greens in a large bowl then arrange the steamed broccoli, roasted sweet potato, carrots, and avocado on top.

Add the Gut-Boosters: Sprinkle with ground flaxseeds, pumpkin seeds, and top with sauerkraut and a dollop of yogurt.

Whisk the Dressing: In a small bowl, mix olive oil, apple cider vinegar, mustard, honey, lemon juice, salt, and pepper until smooth.

Assemble: Drizzle the dressing over the bowl, toss gently, and enjoy!
